Protein Pancakes


2 tbsp PB2 (Natural Flavour)
1 scoop Vanilla Delicious Protein
1 tbsp almond meal
1 tbsp desiccated coconut
3 eggs
1 tsp coconut oil
2 tbsp shaved dark chocolate

Mix all ingredients together with a whisk and cook in a pan over a medium heat in coconut oil. Place a lid on the pan to steam them so that pancakes become fluffy. Flip pancakes when one side is cooked and cook for an additional 30 seconds on the other side. Serve with additional PB2 on top and sprinkle with desiccated coconut. If you want some extra sweetness, drizzle with sugar-free maple flavoured syrup.
